Stay Healthy Naturally This Winter

I don’t know about you, but I much prefer to prevent Winter illnesses than have to deal with being sick and everything it entails.

The thought of cold & flu tablets and antibiotics (and how they mess up our gut bacteria) makes me cringe.

Ingredients
  1. 1 pear, chopped
  2. 1 orange, chopped
  3. 1 grapefruit, chopped
  4. 1 piece ginger, chopped
  5. 1 large handful of spinach
  6. water (to taste)
Instructions
  1. Blend the spinach with a little water.
  2. Roughly chop the ginger and other fruits.
  3. Add to the blender and blend until smooth.
  4. Enjoy!
Notes
  1. Use a small amount of water, as you can always add more if your finished smoothie is too thick.
  2. Use any variety of fruits that you like – I used a William pear and a ruby grapefruit.
  3. If you prefer a sweeter taste, add another orange, or just use half the grapefruit.
  4. Will keep overnight if refrigerated.

Refined Sugar Free and Yummy!

I actually developed the recipe for these Anzac biscuits a couple of years ago, after quite a bit of experimentation. And I’m really happy with them, which is why I’ve finally got around to sharing them here!

There’s always a debate about whether they’re still a true Anzac Biccie if you’ve strayed from the traditional ingredients, so I’ll just let you try them and decide for yourself.

What I love best about these is that they’re made with all natural ingredients, they’re refined sugar free and they still taste really good.

Even Jayson (my hubby) eats them and he’s fussy when it comes to biscuits.

Refined Sugar Free Anzac Biscuits

Ingredients
  1. ½ cup of Almond Meal
  2. ½ cup of Oats
  3. 1 Cup Shredded Coconut
  4. Pinch of Salt
  5. 1 tsp Baking Powder
  6. ½ tsp Cinnamon
  7. 2 tbsp Butter
  8. 1/3 cup Pure Maple Syrup
  9. 1 tbsp Natural Crunchy Peanut Butter
Instructions
  1. Preheat oven to 140-150 ℃ and line a baking tray with paper.
  2. In a medium sized bowl combine the almond meal, oats, coconut, salt, baking powder and cinnamon.
  3. Gently heat the butter, peanut butter and maple syrup in a small saucepan until melted and combined.
  4. Add the wet ingredients to the dry and mix thoroughly.
  5. Take tablespoons of the mixture and flatten into round circles on the tray.
  6. Cook for 25-35 minutes, depending on your oven.
  7. Remove from the oven and leave on the tray for 5 minutes, then transfer to a wire rack to cool.
Notes
  1. This recipe makes 9-10 biscuits.
  2. Store in an airtight container (if you have any left over!).

Your Easter Survival Guide

It’s Easter, so what does that mean to you? I know most of us look forward to having a few days off and maybe even having a short break away somewhere. It’s a popular Aussie thing for families to go camping at Easter.

I know most kids will be excitedly looking forward to the Easter Bunny’s arrival on Sunday and scavenger hunts with lots of Easter Eggs.

But as we get older, that excitement can sometimes morph into stress. Are you worried that temptation will get the better of you and all your good intentions will fly out the window?

Hey, I get it. We all love chocolate! So don’t worry, I’ve got some tips & tricks to share so you can enjoy your Easter chocolate without overindulging.

Some Simple Common Sense Strategies

Plan, plan, plan!

Planning is the key to success and it’s always better than winging your way through on a hope and a prayer. It doesn’t need to be complicated; just take a few minutes to think about how you would ideally like things to go.

Are you going to eat any chocolate or Hot Cross Buns? If so, how many and when? Will you be buying and receiving Easter Eggs? Are there any social situations you’ll need to deal with?

Know Your Weaknesses

If you really love chocolate, don’t try to not have any, unless you’re truly an ‘all or nothing’ person. Telling yourself that you can’t have any usually ends in a binge session at some point down the track. Moderation works well for most people, so allow yourself a certain amount and stick to that.

Practice Mindful Eating

Decide on how much you’re going to eat and then take your time to really enjoy it. Be in the moment and savour the smell and taste without any distractions. Try to give the food your full attention and chew slowly.

Make Your Own

A little bit of raw, dark chocolate really is good for you, so why not make yourself some? You can use different moulds to make different shapes and add your favourite nuts or dried fruit. And with just 3 ingredients, it’s really easy. Grab my recipe here: Raw Chocolate 

As for Hot Cross Buns, there are loads of recipes around for healthier versions. When you make your own, you know exactly what’s in them! Check out The Healthy Chef and Wholefood Simply. 

Stick With Your Regular Exercise

Stick to your regular training schedule if you can, or re schedule where possible. Take the opportunity to do something different like a walk, hike or bike ride with the family.

Remember You Always Have a Choice

If you really don’t want to eat chocolate at home, then don’t buy it or keep it in the house!

You can say no in social situations – don’t feel obliged to eat something if you really don’t want to. If your host simply won’t take no for an answer, then ask for a doggy bag to take home, or have a small portion.

Don’t Try To Be Perfect

If things don’t go according to plan, remember that nobody’s perfect and slip-ups are normal. Forgive yourself and get straight back on track. 

And my final tip is: a little bit won’t hurt, it’s good for the soul!

Mango Macadamia Loaf – Yummo!

What can I say about this delish mango macadamia loaf, other than you should make it as soon as you can!

Mango is one of my fave Summer fruits and if it’s yours too, my top tip for enjoying it as long as you can is to buy up at the end of the season and freeze it. Buy in bulk from your local farmers markets or when there are specials on. 

It doesn’t take a lot of effort – I roughly chop them and then portion them into freezer bags. But you’ll be so glad you did when it’s the middle of Winter and you can make yourself a yummy treat like this loaf, or my mango walnut muffins.

So let’s get to the recipe, shall we?

Mango Macadamia Loaf

Ingredients
  1. 2 ripe mangoes
  2. 1 cup almond meal
  3. ¼ cup flax seed
  4. ¼ cup coconut flour
  5. ⅓ cup macadamia oil
  6. 2 tablespoons pure maple syrup
  7. 3 eggs
  8. ½ teaspoon cinnamon
  9. 1 teaspoon vanilla
  10. ½ teaspoon bicarb soda
  11. ½ teaspoon baking powder
  12. ½ cup shredded coconut
Instructions
  1. Preheat oven to 180℃ and line a loaf tin with baking paper.
  2. Cut the cheeks from the mangoes and scoop out the flesh. Dice half and set aside.
  3. Puree the mango flesh until smooth. Add the oil, eggs, maple syrup and vanilla. Blend until well mixed.
  4. Set aside a large handful of macadamias. Mix the dry ingredients together in a large mixing bowl.
  5. Add the mango mixture and gently fold through.
  6. Pour into the loaf tin and top with reserved macadamias and mango and extra coconut if desired.
  7. Bake for approximately 50 minutes. Check at half way and cover with foil if the top is browning too quickly.
  8. Cool in the tin for 10 minutes, then transfer to a wire rack.
Notes
  1. Use coconut oil instead of macadamia oil if you prefer.
  2. You could also substitute different sweeteners, like raw honey or rice malt syrup.

Introducing The Fierce 50 and My Buddy Karen 

Today, Feb 19th, 2016 marks the launch of the first annual Fierce 50 Campaign bringing together 50 female bloggers over the age of 50 in a celebration of midlife on the 50th day of the year!

I met Karen just a few weeks ago when I was fortunate enough to join the Fierce 50 campaign. Catherine McCormick had an idea of 50 women bloggers over 50 coming together to celebrate midlife on the 50th day of the year. She shared her idea with friends and fellow bloggers Cathy Williamson, Shauna Robertson and Deborah Boland and so the Fierce 50 campaign was born!

Karen’s just getting started on her journey as a fashion, travel and lifestyle blogger. As a busy single mum of two, she’s worked as an accountant for most of her life. Now that her kids are growing up and becoming more independent though, Karen’s decided it’s time to follow her passion.

She’s always loved photography and travel and became more interested in fashion after starting her Instagram account just over a year ago. Karen started taking pics for fun to post on IG and her business developed from there when she realised that people were interested in what she was doing.

Karen also loves meeting new people and making connections around the world. Her family has hosted exchange students from several different countries and she loves the way it’s widened her circle and given her a kind of extended family in other countries.

 

Karen’s developing an ongoing series of interviews for her blog called “The Passion Series” where she hopes that sharing stories about people around the world who are doing what they love will help to inspire others to follow their dreams too.

If you know anything about me by now, you know that breakfast is my favourite meal and that I absolutely loooove a good brekkie bowl or smoothie bowl.

I mean, what’s not to love? They’re delicious and nutritious. They fill you up, keep you satisfied until lunchtime and keep those nasty sugar cravings at bay.

Why not make a different one every day, using fresh seasonal fruits?

Wendy's Way No Blender Bowl
No Blender Required Bowl

Ingredients
  1. 3-4 dessert spoons of plain Greek or Natural Yoghurt
  2. 1 teaspoon of raw honey
Optional
  1. 1 scoop vanilla protein powder
  2. 1 spoon of flax or chia seeds
Toppings
  1. Your choice of nuts
  2. Sesame seeds
  3. Pumpkin seeds
  4. Your choice of fresh fruit
Instructions
  1. Spoon the yoghurt into your bowl and stir in the honey.
  2. Mix in protein powder, if required.
  3. Sprinkle over the nuts and seeds.
  4. Add fresh fruit and you're good to go!
Notes
  1. This bowl only takes a few minutes to make and you don't need a blender.

  1. 2-3 dessert spoons of Greek yoghurt
  2. splash of milk
  3. ⅓ cup of oats
  4. ½ banana
  5. ¼ cup of blueberries
  6. ¼ cup of raspberries
  7. 1 tablespoon of Acai powder
  8. 1 teaspoon of vanilla
Toppings
  1. Pomegranate seeds, dried mango chunks, walnuts
Instructions
  1. Place all ingredients into a high speed blender and blend until smooth.
  2. Pour into a bowl and sprinkle on the toppings.
Notes
  1. Swap the oats for 1 tablespoon of chia seeds or flax if needed.
  2. You could use Goji berries instead of pomegranate. Fresh mango instead of dried would be fine too. And of course, use other nuts if you prefer.

Christmas Crostini

These are hands down my favourite appetiser, ever. They’re really versatile; great as a starter before dinner or healthy party finger food.

We always make them at some point during the festive season. They’re full of flavour yet light and healthy.

Christmas Crostini

Base
  1. 1 sweet potato
  2. 1 tablespoon oil (coconut or olive)
  3. 1 teaspoon sea salt
  4. 1 teaspoon paprika
Bruschetta Topping
  1. 1 avocado
  2. 2 tomatoes
  3. 1 red onion
  4. Italian herbs (basil, thyme, rosemary)
  5. 2 teaspoons olive oil
Instructions
  1. Pre heat oven to 180℃ and line a baking tray with baking paper.
  2. Slice sweet potato into even ½ inch thick slices.
  3. Place slices on the tray and coat with the oil. Sprinkle over the salt and paprika.
  4. Bake for approximately 30 minutes.
  5. While the crostini are cooking, chop and dice the avocado, tomatoes & onion.
  6. Combine in a bowl with the oil and herbs.
  7. Remove the crostini from the oven when cooked and allow to cool.
  8. Top with bruschetta just prior to serving.
Notes
  1. You can bake the crostini base and prepare the topping a little bit ahead. Then keep them separately in the fridge until you're ready to assemble them.

Banana Walnut Bread

Banana bread is one of my absolute favourite snacks and I love to play around by trying different flavours.

I’ve developed my base recipe over the last couple of years to use a combination of flours and other wholesome ingredients. 

It’s amazing how deliciously different it is from anything that you buy commercially.

In fact, the only banana bread I eat these days is my home made recipe. Not just because I know the ingredients are all fresh and natural, but because it tastes so much better!

So here’s my latest version, with walnuts.

It’s been tried and tested by the Wendy’s Way community with positive reviews, so I hope you enjoy it too!

Banana Walnut Bread
A delicious all natural banana & walnut loaf

Ingredients
  1. 2 medium or 3 small bananas
  2. 2 large eggs
  3. 1 tblspn pure maple syrup or raw honey
  4. ¼ cup coconut oil or butter
  5. 1 tsp cinnamon
  6. 1 tsp baking powder
  7. 1 tsp baking soda
  8. 2 tsp vanilla extract
  9. ½ cup of almond meal
  10. ¼ cup coconut flour
  11. ¼ cup flaxseed
  12. 1 cup chopped walnuts
Instructions
  1. Preheat oven to 175℃ and line a loaf pan with baking paper.
  2. Mix the dry ingredients together in a large bowl and set aside.
  3. Chop the bananas into small chunks and place in a small bowl. Add the eggs, melted coconut oil/butter, maple syrup and vanilla and blend until well mixed. (I use a stick blender).
  4. Fold wet ingredients into the dry ingredients until well mixed.
  5. Fold the walnuts through the batter.
  6. Pour into prepared loaf pan and bake in the oven for 45-50 minutes, or until golden on top and a skewer comes out clean.
Notes
  1. I've found that turning the oven down to about 160℃ for the first 20 minutes and then back up to 175℃ s giving me a good result lately. Otherwise, the top cooks too quickly and I have to cover with foil until the rest is cooked through.
  2. Coconut oil and butter both work really well in this recipe.
  3. Pure maple syrup is my preferred sweetener, as I love the flavour it adds to bananas.
  4. ​​​​​​​Enjoy warm from the oven on it's own or spread with butter.

This simple yummy chocolate smoothie bowl was the first free recipe that I started sending out to my community members a couple of months ago.

Like a lot of my favourite recipes, this one happened by accident. By that I just mean that I didn’t plan on creating it. It wasn’t on my list of new ideas to try or experiment with.

I was sitting in bed with a coffee one morning, checking social media and emails (as I often do) and I saw something similar. I didn’t have the exact ingredients on hand, but I was pretty sure I could play around with it and come up with something just as delicious. Which is exactly what I did.

As with all of my recipes, it’s quick and easy to make. It’s made with good quality, wholesome ingredients and it tastes great.

Chocolate Smoothie Bowl

Ingredients
  1. ½ frozen banana
  2. ¼ avocado
  3. 2 tablespoons cacao powder
  4. 1 tablespoon vanilla protein powder
  5. ¼ cup milk (your choice)
  6. splash of cream (optional)
  7. Your favourite toppings
Instructions
  1. Blend all ingredients together in a high speed blender until smooth.
  2. Pour into a bowl and add your favourite toppings.
  3. That's it! Doesn't get much quicker or easier than that.
Notes
  1. I topped this one with strawberries, chopped almonds & shredded coconut.
  2. Bananas, other berries & nuts, seeds and cacao nibs work well too.
