These easy low sugar choc chip cookies are made with just a few simple ingredients. They're quick to whip up for an afternoon snack with a cuppa or after school snack for the kids.
Preheat oven to 180℃ and line a baking tray with baking paper.
Mix the oats and mashed banana together.
Add the coconut, honey and vanilla and mix well.
Add the choc chips last and mix through.
Form the mixture into balls, place on the baking tray and flatten out with the palm of your hand into cookie shapes.
Bake for 10-15 minutes until just starting to brown.
Notes
You can easily add other ingredients such as dried or frozen fruits, chopped nuts and nut butter too.This recipe makes 5-6 cookies, so adjust accordingly.Store in an airtight container in the fridge for 2-3 days.
